You can get a Twitch TV account stream your play and then upload to YouTube.

Best option is to purchase a video converter and record from your console. I don't have any good way to record what I do on my consoles, so I would have to use an emulator on my computer to record my gameplay. I don't use emulators much at all.

  I use camtasia studio 8, it's an easy enough program to crack. I've never had any sort of problems with it. I think some emulators have a recording option, but I've never looked into it myself, but I know TASers use those, not sure how well they work though.
